About the prototype:

The professional knife Masamoto Ao ko Honyaki Yanagi HMA HA0433K is for cutting boneless fish fillets into sashimi and stuffing for sushi with a thin long blade made by hand. The bevel of the knife is one-sided. The knife blade is engraved with hieroglyphs. The handle of the knife has a traditional Japanese octagonal shape and consists of three parts. The middle part of the knife handle is handmade from natural wood and decorated with two silver rings, visually separating the roller and the pommel made of the horn of the water buffalo. The saya is also handcrafted from ebony. The knife is suitable for decorating interiors of kitchens and restaurants, made mainly in traditional or modern Japanese style.

Yanagi knives were originated in the Kansai region (Osaka) and are characterized by a long, thin blade that exerts minimal pressure on the fish fillet when cutting, which greatly improves the aesthetics and taste of the fish.
