   The professional carving knife Masamoto Virgin Carbon Steel Sujihiki HMA HC5427 is for processing meat and poultry. The bevel of the knife is one-sided. The blade of the knife is thin and long with a beveled pointed tip. The blade has a double-sided sharpening 70/30. The knife blade is engraved with hieroglyphs. The handle of the knife has an ergonomic european shape and is made of pakka wood (laminated plastic consisting of a base of valuable wood and a filler of phenolic resin). The handle of the knife is made with two overlays on the knife blade. The knife is suitable for decorating the interiors of kitchens and restaurants made in traditional or modern Japanese style, as well as in any modern stylistic directions.

   Sujihiki knives are carving knives designed for slicing boneless fish fillets, as well as slicing roasts, ham and boneless poultry. Sujihiki knives are the western equivalent of Yanagi knives.

   The Masamoto Sohonten company was founded at the end of the Edo period in 1866 by master knife craftsman Minosuke Matsuzawa. Masamoto Sohonten knives are considered to be the best knives for professional use till nowadays. The Masamoto Sohonten company provides for the manufacture of knives for both right-handers and left-handers.
